One upcoming huge trend that has already taken off is deconstructed cakes! What exactly is a deconstructed wedding cake?

What is a ‘Deconstructed Wedding Cake’?

Many of these cakes are not tall tiered, but instead assembled with different shapes and sizes. Brides and grooms can opt for different combinations and styles such as cupcakes, single tier cakes, double-tiered cakes and a bunch of smaller cakes together.

This trend is arising as a lot of brides and grooms are prefering the more informal approach to weddings. For example, you might want to have smaller numbers at your wedding and would therefore prefer to have the availability of cupcakes and a cake for your guests. You might also want to have a small, unique cake for photographs and then another varying flavours of cupcakes, cakes or pastries for guests to eat. 1. Semi-Naked Cakes

Semi-Naked cakes have taken the wedding world by storm in 2021 and, by the looks of it, this trend is not slowing down. With the sponge layers peeping through the fine frosting, many brides opt for this style of cake to match their rustic and minimalist wedding vibe. Much like their full frosted counterparts, these semi-naked desserts can be dressed up or down with the addition of flowers, berries and greenery to showcase the couple’s personality and style.

2. Single Tier Cakes

If 2021 taught us anything, it’s that wedding cakes don’t need to be three-tiers tall to be fabulous. Over the last 12 months, we have seen a rise in more intimate ceremonies. With a smaller guest list may come a smaller cake but as the saying goes ‘good things come in small packages.’ A single tier can still pack a punch without breaking the bank!

You may love that slightly garish hot pink doughnut tower, but does it tie in with your elegant black tie wedding? Likewise, will that cheese cake fare well at an outdoor wedding if it’s an abnormally hot day? Of course, when it comes to the overall look and feel of your big day, it’s totally okay to break the rules a little if you want to, but be sure to consider the practicalities – nobody wants melted frosting or their wedding venue filled with the aroma of gone-off cheese.

Arm yourself with pics

It’s one thing having the picture of your alternative wedding cake in your head and quite another trying to explain it to someone else. Descriptions are always open to interpretation, so when you consult with your baker, be sure to bring along plenty of pics. You don’t need to have an image of the exact match. Remember 17 year old Martha from the 2014 Great British Bake Off? Yeah well she’s married now. And her Bake Off friends made her a cake. Each.

It was the fifth season of the show, back in the days of Mary Berry, and 17 year old Martha Collison became a quarter finalist in the competitive show. Now 22, she has written two cookery books and writes a weekly column for the Waitrose newspaper. She married accountant Michael Haywood at the weekend and invited all her fellow contestants to celebrate with her.

Not only did they celebrate, but they each made her a cake. Those lucky guests!

Winner Nancy Birtwhistle made a beautiful blush pink cake called Prinsesstarta, Swedish for ‘Princess Cake’, with raspberry jam, pastry cream and a Swiss meringue buttercream crumb coat while Claire Goodwin, the first contestant to be eliminated went for a three-tier chocolate cake decorated with pretzels, Galaxy bars and Golden Eggs.

Also sharing on social media was Chetna Makan, semi-finalist on the show, shared a series of snaps of the wedding day and wrote of how the contestants are still close five years on!

Finalist Richard Burr made a lotus Biscoff cake decorated with delicate icing flowers and replied to a fan that while Paul Hollywood and Mary Berry did not attend the wedding, Mary did send a ‘lovely message’ to the newlyweds.

All the cakes were placed side by side on the dessert table and were definitely eye-catching! This is such a sweet reunion of friends, congratulations to the happy pair!

Northern Irish based wedding cake company, Gemma’s Cakes create beautiful designs that taste just as good as they look.  

Gemma’s Cakes was born in 2012, when Gemma made her daughter Olivia’s fourth birthday cake.  Olivia really wanted a ballet themed cake and when Gemma couldn’t find one she decided to give it a go herself! The party came and went and so did the cake, it was real hit with all the guests. Feeling encouraged Gemma started a Facebook page and it quickly grew into a full-time business.  Within a few months her husband John got involved and took on the baking to keep up with demand. Together they have built their business around raising two children, Olivia now ten, Jack eight.  

Gemma and John have created hundreds of cakes over the years and are passionate about creating bespoke wedding cakes that taste as good as they look!  Based in Castledawson in the centre of Northern Ireland they are ideally situated to deliver cakes to any venue in the country.

One key trend is that many couples are going back to basics, forgetting the extravagance of a wedding and focusing on making meaningful memories with loved ones- this also applies to the latest wedding cake trends for 2018. Perfect for a chic, glam and modern bride, you can choose to have an all-metallic tier, an Ombré effect or even a personalised design that will add an element of luxe to your big day. Minimal, White Frosting (+235%)
